Shortly after arriving at the winery these grapes were gently placed, whole cluster, into a fermentation vessel and sealed for a carbonic ferment. After seven days, they were de-stemmed and allowed to finish fermentation naturally before being pressed into a stainless-steel barrel. Bottled without fining or filtration, with minimal sulfites. Natural sediment will occur.
